Ingredients

  • 2 tubes (8 ounces each) refrigerated crescent rolls
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup butter, melted
  • 16 large marshmallows
  • GLAZE:
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 2 to 3 teaspoons 2% milk
  • 1/4 cup chopped pecans

Directions

  1. Preheat oven to 400°. Unroll both tubes of crescent dough; separate into 16 triangles. Combine sugar and cinnamon in a shallow bowl. Place melted butter in another shallow bowl. Dip marshmallows into butter, then roll in cinnamon-sugar and place 1 coated marshmallow at wide end of each triangle of dough.
  2. Fold corners of dough over marshmallow and roll up. (You might need to stretch and pat the dough as you wrap it around each marshmallow.) Pinch seems to seal tightly. Dip bottoms in butter and place, buttered side down, into ungreased regular-sized muffin cups.
  3. Bake until golden brown and rolls pull away from the pans slightly, 7-9 minutes. Immediately remove from pans to a wire rack.
  4. For glaze, combine confectioners’ sugar, vanilla and enough milk to reach desired consistency. Drizzle over rolls; sprinkle with nuts. Serve warm.

Maybe you’ve spotted them at your local Mexican grocery store or maybe Abuela invites you over for a tamaladaeach year around the holidaysregardless of your connection, tamales are a time-honored (and tasty!) dish that everyone should try.

Thinking about making homemade tamales? They’re a major cooking project that promises a big payoff. Though they take a bit of time to prep and assemble, the steps are straightforward enough. You’ve got this!

What Are Tamales?

Tamales are corn husk-wrapped bundles filled with a corn-based dough calledmasaand a tasty filling. They’re most commonly associated with Mexican cuisine, though you can find tamales all over Latin America. Fillings vary from place to place, but the most common include pork, chicken, beef and vegetablesall swimming in chile, a sauce that’s made using garlic, cumin and dried chili peppers.

It’s traditional for friends and family to come together for a tamalada(tamale-making party), to help assemble.

Did you know?The singular version of tamales is called a tamalthough, they’re so delicious, you’ll probably never need to ask for just one.

Why Are Tamales So Popular at Christmas?

While tamales aren’t strictly a Christmas food, they’re often prepared around the holidays. They require a lot of work (hence the tamale-making parties to help the prep go quickly and joyously), so many families reserve them for special occasions.

Think of tamales sort of like turkey or Christmas cookies: Sure, you could have them any day, but making these time-intensive treats just a few times a year makes them all the more special.

How Do You Eat Tamales?

Don’t eat the husk! This is a common mistake for tamal newbies. Simply unwrap, scoop out with a fork and enjoy. A spoonful of salsa on top is optional.

How to Make Tamales

Tamales can be filled so many waysvegetables, pork, beef. One of our Test Kitchen’s favorite recipes, though, is for tender chicken tamales. Here’s what you need to make them:

Ingredients

  • 24 dried corn husks
  • 1 broiler/fryer chicken (3 to 4 pounds), cut up
  • 3 quarts water
  • 1 medium onion, quartered
  • 2 teaspoons salt
  • 1 garlic clove, crushed

Dough:

Filling:

  • 6 tablespoons canola oil
  • 6 tablespoons all-purpose flour
  • 3/4 cup chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 2 cans (2-1/4 ounces each) sliced ripe olives, drained

Directions

Step 1: Soak the corn husks

Rinse the corn husks to remove any debris, then place into a large bowl and cover them with cold water. Let them soak for at least two hours.

Test Kitchen Tip: There’s no shortcut for this step, so make sure you start here.

Step 2: Cook the chicken

Start this step about an hour after you’ve set out the husks to soak.

In a large stockpot (at least 6 quarts), combine chicken, water, onion, salt and garlic. Bring to a boil, and then immediately reduce the heat to a simmer. Cook at a low simmer, covered, until the chicken is tender, 45-60 minutes.

Test Kitchen Tip: Check the chicken for doneness by piercing the meat; when the meat is cooked, its juices will run clear.

Step 3: Prep the chicken and broth

Remove the chicken from the broth. Let it rest on a plate or cutting board until it’s cool enough to handle. Meanwhile, pour the broth into a bowl through a strainer to remove the vegetables. Skim the fat from the top of the broth with a big spoon.

When the chicken is cool, remove the meat from the bone and shred it with two forks.

Step 4: Make the dough

In a large bowl, beat the shortening until it’s light and fluffy, about 1 minute. Measure out two cups of the broth, and have the masa harina ready. Gradually beat in the masa, adding small amounts at a time and alternating with the broth. Beat well until the dough is uniform and light.

Test Kitchen Tip: For a foolproof dough, do the float test. Drop a small amount of dough into a cup of cold water. The dough should float to the top. If it doesn’t, continue beating until it’s light enough to float.

Step 5: Cook a tasty filling

Back to the stovetop! In a Dutch oven, heat the oil over medium heat. Stir in the flour until blended. Cook and stir until the flour is lightly browned, seven to nine minutes. (This will remove the raw flour taste.) Stir in the seasonings, shredded chicken and four cups of the reserved broth. Bring to a boil. Reduce the heat and simmer, uncovered, stirring occasionally. Simmering allows the mixture to thicken; this should take about 45 minutes.

Step 6: Assemble the tamales

How to make tamales

Drain the corn husks and pat dry, then fill them assembly line-style:

  • On the wide end of the husk, spread 3 tablespoons dough to within 1/2 inch of the edges
  • Top each with 2 tablespoons chicken mixture and 2 teaspoons olives
  • Fold the long sides of the husk over the filling. Make sure they overlap slightly for a secure closure
  • Fold the narrow end of husk over
  • Tie with a strip of husk to secure
  • Repeat until all of the husks are filled and secured

Test Kitchen Tip: Uncooked tamales can be frozen for later, just be sure to pack them tightly in freezer bags before freezing. To serve, thaw in the refrigerator overnight, and then steam for about 45 minutes (see instructions below).

Step 7: Steam

Place a large steamer basket in a 6-quart stockpot over 1 inch of water. Place the tamales upright in the steamer. Bring the water to a boil. Let them steam, covered, until the dough peels away from the husk, about 45 minutes.

Test Kitchen Tip: This is a long steam, and the water level will drop as the water boils off. Be sure to check on the level frequently, and add more water as needed. You don’t want the pot to boil dry; this can damage the pot and makes for sad tamales.

Steps 8 and 9: Brag about your tamales; devour your tamales

Got Leftovers?

Cooked tamales can be frozen, too. Let them cool, then freeze them in their husks. Thaw in the refrigerator overnight, and steam for about 15 minutes to heat them back up before eating.

  • 1-1/2 cups half-and-half cream
  • 3 large egg yolks
  • 3 tablespoons brown sugar
  • 2 teaspoons vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 8 slices day-old brioche bread (1 inch thick)
  • Optional toppings: Butter, maple syrup, fresh berries, whipped cream and confectioners' sugar

Directions

  1. In a shallow dish, whisk together the first 7 ingredients. Preheat a greased griddle over medium heat.
  2. Dip bread into egg mixture, letting it soak 5 seconds on each side. Cook on griddle until golden brown on both sides. Serve with toppings as desired.
Using day-old bread from a bakery helps the French toast to keep its shape. If you're using commercially produced brioche, be sure to allow the bread to become slightly stale for best results.

How to Make Whipped Strawberry Milk

  • 1 tablespoon strawberry Nesquik
  • 1/4 cup heavy whipping cream
  • Glass of your favorite milk

Combine the strawberry Nesquik and heavy cream in a small bowl. Whisk (and whisk!) until the mixture has thickened and become light and fluffy (like whipped cream). Dollop over a glass of your favorite milk.

What’s Not To Love

Whipped strawberry milk tastes like strawberry shortcake in a glass. It’s creamy, light and refreshing and looks adorably delicious, too, with its cloud of pink fluff. It can be served over cold or warm milk, stirred in or left floating on top. I’ve tried it over hot chocolate, too, and loved the chocolate-covered strawberry mashup. The possibilities are endless!

Theres nothing as delicious as freshly baked bread, but sometimes the process requires more time than we have. Guess what? If you plan ahead, you can freeze bread dough to save time on baking day.

What types of yeast dough freeze well?

Because some yeast bread recipes do freeze better than others, its best to use a recipe specifically written to freeze for baking at a later time. Those breads are typically lower in fat and salt, but higher in yeast and sugar, like basic homemade breadandpizza dough.

When should you freeze yeast dough?

Two points in the dough-making process are good times to freeze the dough. The first is after kneading and before the first rise. The other is after you’ve shaped the dough and before the second rise.

How to Freeze Dough Before the First Rise

Place flatteneddoughon baking sheets andfreezefor 1 hour. Oncedoughis frozen, remove from the freezer and wrap tightly with either plastic wrap or aluminum foil. Then place in resealable plastic bags and return to the freezer. Store the dough in an airtight freezer container for up to four weeks.

Thaw the dough in the refrigerator overnight. When you’re ready to use it, place the dough on a greased baking sheet. Cover and let the dough rise in a warm place until doubled (this is the first rise). It will take longer than usual for the dough to rise, up to twice as long if it hadnt been frozen. Punch the dough down, shape it then let it rise for the second time before baking.

How to Freeze Dough After Shaping

This works especially well for small, shaped breads (like dinner rolls) and doughs that dont have a sugary filling. Sweets like cinnamon rolls could collect moisture during the freezing and thawing processes, so it’s best to prep those the day you bake.

Shape the dough, then freeze it on a baking sheet. Once frozen, store the dough in an airtight container for up to four weeks. Thaw, covered, on greased baking sheets in the refrigerator overnight. Cover and let it rise in a warm place until doubled (this is the second rise), which will take longer than dough that has not been frozen. Bake as directed.

Fresh-baked bread is always more delicious than reheated, so use these tips to prep your dough ahead if you dont have time to make the full recipe on the day you plan on baking your bread.

Where would life be without leftovers? Whether you’ve ordered too much take-out, or the gang couldn’t polish off that hearty 13×9 casserole, some foods just warrant a surplus. Which is great because leftovers can make the best next-day meals, and they’re handy for meal planners everywhere. But sometimes that several-days-old dish can look a little questionable after sitting in the back of the fridge. The question arises: How long do leftovers actually last? Food editor and resident leftover expert Peggy Woodward shares her best practices:

If you’re looking for creative ways to use up leftovers, try these tasty ideas.

Refrigerator Storage

The following foods will keep only 1 to 2 days in the refrigerator:

  • Fresh (raw) ground meats and stew meats
  • Gravy and meat broth
  • Fresh poultry and fresh fish
  • Shrimp, scallops, crayfish and squid
  • Shucked clams, mussels and oysters

The following foods will keep 3 to 4 days in the refrigerator:

  • Fully cooked ham slices
  • Cooked meat and meat casseroles
  • Cooked chicken and chicken casseroles (Learn more about how to tell if chicken is bad)
  • Pizza
  • Cooked fish and shellfish

The following items will keep up to 5 days in the refrigerator:

  • Opened packages of lunch or deli meats
  • Fully cooked ham portions
  • Fresh meat steaks, chops and roasts

The following foods have longer refrigerator storage times as indicated:

  • Fresh eggs in shells = 3 to 5 weeks
  • Hard-cooked eggs = 1 week
  • Commercial mayonnaise after opening = 2 months
  • Opened hard cheese (such as cheddar or Swiss) = 3 to 4 weeks
  • Soft cheese (such as brie or feta), cottage cheese, ricotta and milk = 1 week
  • Yogurt = 7 to 14 days

3 Rules of Thumb for All Foods:

When in Doubt, Throw it Out

If you lose track of how long a food has been in the refrigerator, it’s best to not risk eating it. Simply throw the food away. To avoid this problem in the future, label and date your leftovers before refrigerating. And to produce even less food waste, check out the food scraps you didn’t know you could eat.

Store Food Wisely

For best storage, it’s wise to divvy up hot leftovers into smaller portions, then place in shallow dishes to cool quickly. Wait until steam has stopped rising from the food before chilling, so the steam won’t heat up your fridge. Remember to choose strong food-storage containers that are clean and in good condition. And opt for covered containersthey’re always a better choice than uncovered bowls. Never store food in the can it came in.

Don’t Leave Dishes At Room Temperature

Food that’s sat out on the counter for too long can start growing harmful bacteria, so fridge or freeze as soon as you can. We recommend a two-hour window. Try to get food in the refrigerator within two hours after it’s cooked (or sooner if it’s cooled enough). If food has been left out for longer than that, it may be unsafe to eat. Tips For Using Up Your Leftovers

To make sure your food doesn’t go to waste, get creative! Leftover meat can be added to a simple soup or be combined with eggs into a flaky quiche or frittata. If you have a small amount of leftover cooked vegetables, put an egg on top and enjoy the dish for supper. Leftover grains make tasty fried rice. Fruits can go into a fruit salad, chopped vegetables into a stir-fry. Many holiday foods have ample leftover uses, too. Check out ourcreative ways to use up mashed potatoes for inspiration.

If you’re new to planning a Passover Seder, the different types of matzo can get a little confusingbut it’s actually pretty simple. Matzo meal, matzo cake meal and matzo farfel are all made from the same thing (you guessed it): matzo.

What Is Matzo?

Matzo is an unleavened bread traditionally associated with Passover. It is made from a mix of flour and water, and needs to be prepared quickly in order to keep its flatbread appearance.It’s important to keep in mind that not all matzo is kosher, which is a requirement for a Passover meal. Skip over the matzo packages labeled “not kosher for Passover” when shopping for ingredients for your dish to pass.

What Is Matzo Meal?

Matzo meal is ground matzo. It’s slightly coarse, like the texture of breadcrumbs, and is essential to making matzo balls. Matzo ball mix is basically seasoned matzo meal.

Matzo cake meal is finely ground matzo and has a similar consistency to flour. It’s commonly used to make Passover baked goods and crusts. It’s also in our gefilte fish recipe!

What Is Matzo Farfel?

Matzo farfel is simply crumbled matzo. It’s not finely ground, but closer to the size of coarsely crushed crackers. While there are quite a few uses for matzo, the bigger size of matzo farfel makes it particularly ideal for bready stuffings, crunchy toppings, and sweet or savory kugels.

To make things a little big more confusing, there are matzo farfel noodles, which are completely different than matzo farfel. They are tiny, pellet-shaped egg noodles made with flour, egg and salt.

Can You Make Your Own Matzo?

You can definitely make your own matzo (just make sure the recipe you use is kosher if you’re following strict Passover rules). If you’re new to matzo, it might be helpful to buy prepared until you have a better sense of what the texture of each product should be like before trying new recipes for Passover. You can also buy matzo from the store and make your own meal, cake meal and farfel as needed.
